What is Chemex?

Invented in 1941 by chemist Peter Schlumbohm, the Chemex is both a design object and an exceptional infusion tool. Recognizable by its slender shape and wooden neck, it uses a thick paper filter which allows for slow and controlled extraction, capturing oils and sediment for a clear, pure coffee with subtle aromas. When it comes to preparing L'Original or La Chic , the Chemex infusion reveals their flavors very precisely. You will enjoy a smooth infusion and subtle notes.

Key Ingredients

  • 15g of La Chic (ground or kept as is) or L'Original 
  • 400 of water at 95°C,
  • A Chemex and its paper filter.

The 5-step brewing method

1. Preparation: Place the paper filter in the Chemex. Rinse it with hot water to remove the paper taste and preheat the Chemex. Pour out the rinsing water.

2. Pre-infuse: Place your chemex on a scale. Pour in your ground chicory (or not!) or your Original grains. Tare the scale, and add 90g of water, taking care to wet all the grains well.

3. Pour: From 30 seconds, pour up to 250g of circulating water, without touching the filter. 

4. Pour again: From 1m30, pour up to 400g of water in a circular motion, always without touching the filter.

5. Enjoy: Once the infusion is finished, remove the filter, mix Bibo in the carafe to homogenize it. Enjoy!
